Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup pineapple, fresh or canned (rings or chunks)
  • 4 cups baby spinach, fresh
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced
  • 0.5 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your grill or stovetop grill pan over medium-high heat.

Step 2

Season the chicken breasts with garlic powder, paprika, salt, and black pepper. Drizzle with 1 tablespoon of olive oil to coat evenly.

Step 3

Grill the chicken for 6-7 minutes on each side, or until fully cooked with an internal temperature of 165°F (74°C). Remove from heat and let rest for 5 minutes before slicing into thin strips.

Step 4

If using fresh pineapple, grill the pineapple slices for 1-2 minutes per side until slightly caramelized. For canned pineapple, drain well and pat dry if necessary.

Step 5

In a small bowl, whisk together the remaining 2 tablespoons of olive oil, balsamic vinegar, honey, Dijon mustard, and a pinch of salt and pepper to create the dressing.

Step 6

In a large salad bowl, combine the baby spinach, cherry tomatoes, red onion, pineapple pieces, and feta cheese.

Step 7

Add the sliced grilled chicken on top of the salad ingredients.

Step 8

Drizzle the salad with the prepared dressing and gently toss to combine, or serve the dressing on the side.

Step 9

Divide the salad evenly among plates and serve immediately.
