Ingredients

  • 2 pieces chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic cloves, minced
  • 1 cup chicken broth
  • 0.25 cup lemon juice, freshly squeezed
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped
  • 12 ounces linguine or spaghetti

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine or spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

Step 2

While the pasta cooks, pat the chicken breasts dry with a paper towel. Slice each breast in half lengthwise so you have four thin pieces. Season both sides with salt and black pepper.

Place the flour on a plate. Lightly dredge each piece of chicken in the flour, shaking off any excess.

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once the butter has melted and the pan is hot, add the chicken. Stir in the sliced chicken and most of the chopped parsley, reserving a little for garnish.
