  • 3 pieces garlic cloves, minced
  • 1 cup chicken broth
  • 0.5 cup dry white wine (optional, substitute with chicken broth if not using)
  • 0.25 cup fresh lemon juice
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped
  • 12 ounces spaghetti or linguine
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Begin by preparing the chicken. Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch.

Step 2

Season both sides of the chicken breasts with salt and black pepper. Dredge the chicken in the flour, shaking off any excess.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once the butter has melted, add the chicken breasts and cook for about 4-5 minutes per side, or until golden brown and fully cooked (internal temperature should read 165°F). Add the drained pasta to the skillet with the piccata sauce. Toss to coat, adding the reserved pasta water a little at a time if the sauce needs to be loosened.
