Ingredients

  • 2 pieces Boneless, skinless chicken breast
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 4 pieces Large flour tortillas
  • 0.5 cup Pesto sauce
  • 1 cup Mozzarella cheese
  • 1 cup Cherry tomatoes
  • 1 piece Avocado
  • 0.5 piece Red onion
  • 1 cup Baby spinach

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

In a large skillet, heat the olive oil over medium heat.

Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown. Remove from skillet and let rest for 5 minutes.

While the chicken is resting, halve the cherry tomatoes, slice the avocado, and thinly slice the red onion.

Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side to make them pliable.
