Ingredients

  • 2 tablespoons Olive oil
  • 0.5 cups Basil pesto
  • 4 slices Mozzarella cheese
  • 4 pieces Ciabatta rolls (or bread of choice)
  • 1 cups Fresh spinach leaves
  • 1 medium, sliced Tomato
  • 2 tablespoons Butter (optional, for toasting bread)

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat olive oil in a skillet over medium heat. Cook the chicken breasts for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from heat and allow to rest for 5 minutes before slicing thinly.
