Ingredients

  • 1 piece Boneless, skinless chicken breast
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoons Pesto sauce
  • 0.25 cup Feta cheese, crumbled
  • 2 rolls Ciabatta bread or baguette, sliced in half
  • 1 cup Fresh spinach leaves
  • 1 medium Tomato, sliced
  • 1 tablespoon Butter (optional, for toasting bread)

Directions

Step 1

Season the chicken breast with salt and ground black pepper on both sides.

Step 2

Heat olive oil in a skillet over medium heat. Add the chicken breast to the skillet and cook for 6-8 minutes on each side, or until fully cooked (internal temperature of 165°F/74°C). Remove the chicken from the skillet and let it rest for 5 minutes before slicing it into thin strips.

Step 3

Meanwhile, spread 1 tablespoon of pesto sauce on the inside of each half of the ciabatta rolls or baguette slices.

Step 4

Layer the bottom half of the bread with fresh spinach leaves, sliced tomato, cooked chicken slices, and crumbled feta cheese.

Place the top half of the bread over the assembled sandwich fillings.
