Ingredients

  • 12 oz penne pasta
  • 2 large (about 1 lb total) chicken breasts
  • 3 tbsp olive oil
  • 3 minced garlic cloves
  • 28 oz (1 can) crushed tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 8 oz, sliced fresh mozzarella
  • 0.25 cup, chopped fresh basil leaves
  • 0.25 cup grated Parmesan cheese

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

While the pasta cooks, season the chicken breasts with salt and black pepper on both sides.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side or until fully cooked. Remove from the skillet, let rest for 5 minutes, then slice into thin strips.

In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for 1 minute until fragrant.
