Ingredients

  • 300 grams penne pasta
  • 2 pieces chicken breast
  • 3 tablespoons olive oil
  • 1 teaspoon red chilli flakes
  • 3 pieces garlic cloves, minced
  • 10 grams basil leaves, fresh
  • 15 grams parsley, chopped
  • 30 grams parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper, ground
  • 0.5 cup chicken stock
  • 1 tablespoon lemon juice
  • 2 liters water

Directions

Step 1

Bring 2 liters of water to a boil in a large pot. Add 1/2 teaspoon of salt and cook the penne pasta according to the package instructions (approximately 10 minutes) until al dente. Drain and set aside.

Step 2

While the pasta is cooking, season the chicken breasts on both sides with a pinch of salt and black pepper.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side or until fully cooked. Remove the chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.

In the same skillet, add the remaining 1 tablespoon of olive oil and reduce the heat to medium-low. Stir in the minced garlic and red chilli flakes, cooking for 1 minute until fragrant.
