Ingredients

  • 12 oz penne pasta
  • 2 pieces chicken breast
  • 4 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 2 cups heavy cream
  • 1.5 cups grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley, chopped
  • 8 cups water (for boiling pasta)

Directions

Step 1

Bring 8 cups of water to a boil in a large pot. Add a pinch of salt and cook the penne pasta according to the package instructions, usually about 10-12 minutes until al dente. Drain and set aside.

Step 2

While the pasta is cooking, season both sides of the chicken breasts with 1/2 tsp of salt, 1/4 tsp of black pepper, and Italian seasoning.

Step 3

Heat olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for 6-8 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and let it rest for 5 minutes before slicing it into thin strips.

Step 4

In the same skillet, reduce the heat to medium-low and add unsalted butter. Once the butter has melted, add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 5

Slowly pour in the heavy cream while stirring, then allow the mixture to come to a simmer. Avoid boiling.

Add the grated Parmesan cheese a little bit at a time, stirring constantly until fully melted and the sauce becomes smooth and creamy. Season the Alfredo sauce with the remaining 1/2 tsp of salt and 1/4 tsp of black pepper.

Add the cooked penne pasta to the skillet with the Alfredo sauce and toss to coat evenly.

Add the sliced chicken on top of the pasta, and gently mix to combine everything.
