Ingredients

  • 500 grams Chicken breast
  • 2 whole Banana leaves
  • 250 ml Coconut milk
  • 2 tablespoons Soy sauce
  • 4 cloves Garlic
  • 1 medium Onion
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 thumb-sized piece Ginger
  • 4 cups Cooked white rice
  • 2 pieces Lime or calamansi

Directions

Step 1

Begin by slicing the chicken breast into thin strips. Set aside.

Step 2

Peel and chop the garlic, onion, and ginger finely.

Step 3

In a large skillet, heat the vegetable oil over medium heat.

Step 4

Add the garlic, onion, and ginger to the skillet. Sauté for about 2-3 minutes or until the onions are translucent.

Add the chicken strips to the skillet and cook them until they are no longer pink, about 5-7 minutes.

Pour the coconut milk and soy sauce into the skillet with the chicken. Stir well to combine.

Season the mixture with salt and black pepper. Let it simmer, stirring occasionally, for about 8-10 minutes or until the sauce is slightly thickened and the chicken is cooked through.
