  • 1 teaspoon dried oregano
  • 1 piece bay leaf
  • 1.5 cups short pasta (e.g., ditalini, shells, or elbow)
  • 2 cups baby spinach
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium heat.

Step 2

Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes until the vegetables are softened.

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Place the chicken thighs into the pot and pour in the chicken broth.
