Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 12 ounces penne pasta
  • 3 cloves minced garlic
  • 1.5 cups grape tomatoes, halved
  • 3 cups baby spinach
  • 0.75 cup chicken broth
  • 2 tablespoons lemon juice
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Season the chicken breasts with salt, black pepper, and Italian seasoning on both sides.

Step 4

Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from skillet and let rest for 5 minutes, then slice into thin strips.

Step 5

In the same skillet, heat the remaining 2 tablespoons of olive oil over medium heat.

Step 6

Add the minced garlic and sauté for 1 minute until fragrant.

Step 7

Add the halved grape tomatoes and cook for 3-4 minutes until the tomatoes begin to soften.

Step 8

Add the baby spinach to the skillet and cook for another 2 minutes until wilted.

Step 9

Pour in the chicken broth and lemon juice, stirring to combine. Let the mixture simmer for 2-3 minutes.

Step 10

Add the cooked pasta to the skillet and toss to coat in the sauce.

Step 11

Stir in the sliced chicken and grated Parmesan cheese. Mix well to combine, allowing the cheese to melt slightly.

Step 12

Taste and adjust seasoning with additional salt and pepper if necessary.

Step 13

Serve warm, garnished with extra Parmesan if desired.
