  • 2 pieces chicken breasts
  • 1 teaspoon salt

  • 3 minced garlic cloves
  • 28 ounces (1 large can) crushed tomatoes
  • 6 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup uncooked pasta shells
  • 0.75 cup grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese
  • 2 tablespoons (chopped, for garnish) fresh parsley

Directions

Step 1

Heat 2 tablespoons of olive oil in a large soup pot over medium-high heat.

Step 2

Season both sides of the chicken breasts with 1 teaspoon of salt and 0.5 teaspoon of black pepper.

Sear the chicken breasts in the pot for 2-3 minutes per side until lightly golden. Remove and set aside (they will finish cooking later).
