  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup breadcrumbs
  • 0.5 cup parmesan cheese, grated
  • 0.25 cup olive oil
  • 1 cup marinara sauce
  • 4 slices mozzarella cheese, sliced
  • 4 pieces hoagie rolls
  • 8 leaves fresh basil leaves

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Slice the chicken breasts in half lengthwise to make four thin pieces. Lightly pound them with a meat mallet to ensure even thickness.

Season the chicken with salt and black pepper on both sides.

Prepare a breading station with three bowls. In the first bowl, place the flour. In the second bowl, beat together the eggs and water. In the third bowl, mix the breadcrumbs and grated parmesan cheese.
