In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water and knead the mixture into a smooth dough. Add 2 tablespoons of oil, knead again, cover the dough, and let it rest for 20 minutes.
Heat 2 tablespoons of oil in a pan over medium heat. Add the chopped onion and cook until translucent.
Add the minced garlic, ginger, cumin powder, coriander powder, red chili powder, turmeric powder, and cook for 1 minute until aromatic.
Add the ground chicken to the pan and cook until fully browned and no longer pink, breaking it into small pieces with a spatula.
Add garam masala and season with salt to taste. Mix well and cook until the chicken mixture is dry. Turn off the heat and stir in the chopped cilantro. Let the filling cool completely.
Divide the dough into equal portions and roll each portion into balls.
On a floured surface, roll out one ball of dough into a 6-inch circle. Place a spoonful of the chicken filling in the center.
Fold the edges of the dough over the filling to seal it completely, forming a stuffed ball. Gently flatten the ball and roll it out again into a 6-8 inch circle, being careful not to tear the dough.
Heat a skillet or tawa over medium heat. Place the rolled-out paratha onto the hot surface and cook for 1-2 minutes until bubbles form.
Flip the paratha, drizzle a little oil over the top, and cook the other side until golden brown. Flip again and repeat until both sides are cooked, adding more oil as needed.
Repeat the process with the remaining dough and filling.
Serve the chicken parathas warm with yogurt, pickles, or chutneys on the side.
