Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 large Shallot, finely minced
  • 2 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 2 tablespoons Dijon mustard
  • 1 cup Artichoke hearts, quartered (canned or frozen, thawed)
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound each breast to an even thickness of about 1/4 inch.

Step 2

Season both sides of the chicken with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 3

Dredge each chicken breast lightly in the flour, shaking off the excess.

Step 4

In a large skillet over medium-high heat, heat 1 tablespoon of olive oil and 1 tablespoon of butter. Once the butter is melted and sizzling, add two chicken paillards and sear for 2-3 minutes on each side, until golden brown and cooked through. Remove to a plate and cover with foil to keep warm. Repeat with the remaining olive oil, butter, and chicken.

Return the cooked chicken to the skillet, spooning some of the sauce over each piece. Allow everything to warm through for 1-2 minutes.

Serve the chicken paillards hot, topped with the artichokes Dijon sauce. Garnish with additional parsley, if desired.
