Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 large carrots, peeled and sliced
  • 2 medium celery stalks, sliced
  • 3 medium garlic cloves, minced
  • 1 pound chicken breast, boneless and skinless
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 whole bay leaf
  • 1 cup orzo pasta
  • 2 cups fresh spinach, roughly chopped
  • 1 medium lemon, juiced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion, sliced carrots, and sliced celery to the pot. Cook for about 5-7 minutes, stirring occasionally, until vegetables are softened.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the chicken breast to the pot along with the chicken broth, dried thyme, dried oregano, bay leaf, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for about 20-25 minutes, or until the chicken is cooked through.
