  • 4 cups chicken broth
  • 1.5 cups dry orzo pasta
  • 0.5 cups heavy cream
  • 0.5 cups grated Parmesan cheese
  • 4 cups baby spinach
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Season the chicken breasts with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper on both sides.

In a large skillet or sauté pan, heat 1 tablespoon of olive oil over medium-high heat. Cook the chicken breasts for 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the pan and set aside on a plate. Cover loosely with foil to keep warm.
