Ingredients

  • 200 grams Chicken breast (or mushrooms, or firm tofu)
  • 100 grams Ricotta cheese
  • 50 grams Parmesan cheese, grated
  • 100 grams Spinach, fresh
  • 1 large Egg yolk
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Nutmeg, ground (optional)

Directions

Step 1

Prepare the main ingredient: If using chicken, cook it in a skillet over medium heat with a little olive oil until fully cooked, about 5–7 minutes, then finely chop or shred. If using mushrooms, finely chop and sauté in olive oil until softened and moisture has evaporated, about 5 minutes. If using tofu, crumble it into small pieces and sauté in olive oil for 4–5 minutes to remove excess water.

Step 2

Blanch the spinach: Bring a pot of salted water to a boil, add the spinach, and cook for 1 minute. Immediately transfer the spinach to a bowl of ice water to stop the cooking process. Drain and squeeze out excess moisture, then finely chop.

Step 3

In a mixing bowl, combine the prepared main ingredient (chicken, mushrooms, or tofu) with the ricotta, Parmesan, chopped spinach, egg yolk, and minced garlic.
