  • 1 cup frozen corn kernels
  • 2 tablespoons taco seasoning
  • 4 ounces cream cheese
  • 1 cup shredded Mexican blend cheese
  • 2 tablespoons chopped fresh cilantro (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper

Directions

Step 1

Preheat a large skillet over medium-high heat.

Season the chicken breasts with salt and pepper on both sides.

In the skillet, heat the oil, then add the chicken breasts. Cook for 5-6 minutes per side, or until golden brown and fully cooked (internal temperature should reach 165°F). Remove chicken from skillet and set aside.
