Ingredients

  • 1 lb Chicken breast
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper

  • 3 cloves Garlic cloves, minced
  • 2 medium Carrots, diced
  • 2 stalks Celery stalks, diced
  • 8 cups Chicken broth
  • 2 cups Egg noodles
  • 1 tsp Fresh thyme leaves
  • 2 tbsp Fresh parsley, chopped
  • 0.25 tsp Crushed red chili flakes
  • 1 small Red chili pepper, thinly sliced
  • 1 tbsp Lemon juice
  • 1 cup Water (if needed)

Directions

Step 1

Season the chicken breast with 0.5 tsp of salt and 0.5 tsp of ground black pepper.

Step 2

In a large stockpot or Dutch oven, heat olive oil over medium heat. Sear the chicken breast until lightly browned on both sides, about 3-4 minutes each. Remove the chicken from the pot and set aside.

Step 3

In the same pot, add the diced onion, minced garlic, carrots, and celery. Sauté for 5-7 minutes until the vegetables soften and the onion becomes translucent.

Return the seared chicken breast to the pot. Pour in the chicken broth and bring the mixture to a boil.
