Ingredients

  • 2 tablespoons olive oil
  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 2 cups carrots, diced
  • 1.5 cups celery, diced
  • 1 medium yellow onion, diced
  • 3 pieces garlic cloves, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 0.5 teaspoons dried rosemary
  • 1 piece bay leaf
  • 8 ounces egg noodles
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Season the chicken breasts with salt and pepper, then add them to the pot. Cook for 4-5 minutes per side until lightly browned. Remove the chicken from the pot and set aside.

Step 3

Add the diced carrots, celery, and onion to the pot. Cook for 5-6 minutes, stirring occasionally, until the vegetables begin to soften.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 5

Pour in the chicken broth and add the dried thyme, dried rosemary, and bay leaf. Stir to combine.

Step 6

Return the chicken breasts to the pot. Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes, partially covered, until the chicken is cooked through.

Step 7

Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.

Step 8

Add the egg noodles to the soup and cook for 8-10 minutes, or until the noodles are tender.

Step 9

Stir in the chopped parsley and lemon juice. Taste and adjust seasoning with additional salt and pepper, if needed.

Step 10

Remove the bay leaf before serving. Ladle the soup into bowls and enjoy warm.
