Ingredients

  • 1000 g Chicken, bone-in pieces
  • 100 ml Ghee or oil
  • 2 large Onions, thinly sliced
  • 2 tbsp Ginger garlic paste
  • 3 tbsp Nihari masala
  • 2 tsp Salt
  • 2 tbsp Wheat flour
  • 1200 ml Water
  • 100 g Yogurt, whisked
  • 1 cup Fresh coriander leaves, chopped
  • 4 Green chilies, chopped
  • 2 inch Ginger, julienned
  • 1 Lemon, wedges

Directions

Step 1

Heat ghee or oil in a large pot over medium heat.

Step 2

Add the sliced onions and saute until golden and caramelized.

Step 3

Stir in the ginger garlic paste and cook for a minute until the raw smell disappears.

Step 4

Add the nihari masala and salt, and stir well.

Step 5

Add the chicken pieces to the pot, stirring to coat them with the spices. Cook until the chicken changes color.

Step 6

Mix the wheat flour with a little water to make a smooth paste and add it to the pot. Stir continuously to avoid lumps.

Step 7

Pour in 1200 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the chicken is tender and the oil separates at the top.

Incorporate the whisked yogurt into the stew, stirring well to combine.

Step 9

Adjust the salt to taste and let it simmer for another 5 minutes.

Step 10

Garnish with fresh coriander, julienned ginger, and chopped green chilies.
