  • 1 lb Boneless, skinless chicken thighs
  • 2 tbsp Olive oil
  • 1 medium Yellow onion, diced
  • 1 medium Green bell pepper, diced
  • 2 stalks Celery stalks, diced
  • 3 cloves Garlic, minced
  • 6 cups Chicken broth
  • 14.5 oz Diced tomatoes (canned)
  • 2 tbsp Tomato paste
  • 2 pieces Bay leaves
  • 1 tsp Dried thyme
  • 1 tsp Paprika
  • 0.5 tsp Cayenne pepper
  • 0.5 tsp Ground black pepper
  • 1 cup White rice, uncooked
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)
  • 1 to taste Salt

Directions

Step 1

Season the chicken thighs with salt and set aside.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 3

Add the chicken thighs to the pot and sear for about 3-4 minutes on each side, until browned. Remove the chicken and set it aside.

In the same pot, add the diced onion, green bell pepper, and celery. Sauté for 5-7 minutes until the vegetables are softened.

Stir in the minced garlic and cook for 1 minute until fragrant.

Remove and discard the bay leaves.
