Preheat the oven to 375°F (190°C).
Season the chicken breasts with salt and black pepper on both sides.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden, about 2-3 minutes per side. Remove from the skillet and set aside.
In the same skillet, add the remaining olive oil and butter. Once melted, sauté the sliced mushrooms until they release their moisture and begin to brown, about 6-8 minutes.
Add the minced garlic to the mushrooms and cook for another 1 minute until fragrant.

In a small bowl, mix the breadcrumbs with 1 tablespoon of melted butter. Sprinkle the breadcrumb mixture and shredded mozzarella cheese over the top of the casserole.
Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked (internal temperature of 165°F or 74°C) and the topping is golden and bubbly.
Let the casserole rest for 5 minutes before serving. Garnish with additional parsley if desired.
