  • 1.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 1 tsp salt
  • 3 tbsp unsalted butter, cold and cubed
  • 1 cup frozen peas
  • 1 tsp fresh thyme leaves
  • 2 tbsp fresh parsley, chopped
  • 0 to taste salt (for seasoning)
  • 0 to taste black pepper (for seasoning)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.

Season the chicken thighs with salt and black pepper. Add them to the pot and sear for 3-4 minutes on each side until golden brown. Remove the chicken and set aside.

In the same pot, add the diced onion, sliced carrots, and chopped celery. Cook for 5-7 minutes until the vegetables begin to soften and the onion is translucent.

Add the minced garlic and cook for 1 more minute until fragrant.
