Ingredients

  • 2 pieces Chicken breast
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 1 cup Mushrooms, sliced
  • 2 cups Spinach, fresh
  • 4 pieces Flour tortillas (large)
  • 1 cup Shredded mozzarella cheese
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Butter

Directions

Step 1

Season the chicken breasts with salt, black pepper, garlic powder, and onion powder.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken breasts for about 5-7 minutes on each side or until fully cooked. Remove from the skillet and let rest for 5 minutes before slicing into thin strips.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced mushrooms until golden brown, about 4-5 minutes. Add the spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.

Step 4

Heat a clean large skillet or griddle over medium heat. Lightly butter one side of a tortilla and place it butter-side down on the skillet.

Step 5

Sprinkle a layer of mozzarella and cheddar cheese evenly over one half of the tortilla. Add some cooked chicken slices, sautéed mushrooms, and spinach over the cheese.

Step 6

Fold the empty half of the tortilla over the filling to create a half-moon shape. Gently press down with a spatula.

Step 7

Cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.

Step 8

Remove the quesadilla from the skillet and repeat with the remaining tortillas and fillings.

Step 9

Slice the quesadillas into wedges and serve warm with your favorite salsa, sour cream, or guacamole.
