  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 3 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 8 ounces Cremini mushrooms
  • 3 cloves Garlic cloves, minced
  • 1.25 cups Chicken broth
  • 0.25 cup Fresh lemon juice
  • 2 tablespoons Capers, drained
  • 2 tablespoons Fresh parsley, chopped
  • 4 slices Lemon slices (optional, for garnish)

Directions

Step 1

Slice each chicken breast horizontally to create two thin cutlets from each. Place the cutlets between two sheets of plastic wrap and pound to an even thickness, about 1/2 inch.

Season both sides of the chicken cutlets with salt and black pepper.

Dredge the chicken in the flour, shaking off the excess, and set aside.

Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat.
