Ingredients

  • 2 sheets Puff pastry sheets
  • 2 pieces Chicken breast
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 1 medium Yellow bell pepper, diced
  • 1 cup Mozzarella cheese, shredded
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Dried Italian herbs
  • 1 large Egg, beaten

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Thaw the puff pastry sheets according to the package instructions and set aside.

Step 3

Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Step 4

Dice the chicken breast into small cubes and add it to the skillet. Cook for 5-7 minutes until fully cooked and lightly browned.

Step 5

Add the diced red and yellow bell peppers to the skillet. Cook for 3-4 minutes until slightly softened. Season with salt, black pepper, and dried Italian herbs. Remove from heat and let the mixture cool slightly.

Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares, giving you 8 squares in total.
