Ingredients

  • 4 pieces Chicken thighs, bone-in and skin-on
  • 1 cup Coconut milk
  • 4 pieces Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 2 pieces Shallots, finely chopped
  • 1 piece Red chili, finely sliced
  • 2 tablespoons Lime juice
  • 1 tablespoon Fish sauce
  • 1 tablespoon Soy sauce
  • 1 teaspoon Brown sugar
  • 1 teaspoon Turmeric powder
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Fresh cilantro, chopped
  • 2 tablespoons Scallions, chopped
  • 4 cups Cooked rice, for serving

Directions

Step 1

Pat the chicken thighs dry with paper towels, and season both sides with salt and pepper.

Step 2

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.

Step 3

Place the chicken thighs, skin-side down, in the skillet. Cook for 5-7 minutes or until the skin is golden and crispy. Flip and cook the other side for an additional 5 minutes. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, lower the heat to medium, and sauté the minced garlic, grated ginger, chopped shallots, and sliced red chili until fragrant, about 2-3 minutes.

Step 5

Add the turmeric powder, fish sauce, soy sauce, lime juice, brown sugar, and coconut milk into the skillet. Stir well to combine.

Step 6

Return the chicken thighs to the skillet, skin-side up. Spoon the sauce over the chicken and let it simmer over low heat for 25-30 minutes, or until the chicken is tender and cooked through, and the sauce has thickened slightly.
