Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 5 cups mixed salad greens
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • 0.5 cup fresh mint leaves
  • 0.25 medium red onion
  • 3 tablespoons lime juice
  • 1 tablespoon honey
  • 2 teaspoons soy sauce
  • 1 teaspoon lime zest

Directions

Step 1

Preheat your grill or stove-top grill pan to medium-high heat.

Brush the chicken breasts with 1 tablespoon of olive oil and season them with salt and black pepper on both sides.
