Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Sun-dried tomatoes, chopped
  • 0.25 cup Fresh basil leaves, chopped
  • 12 ounces Fettuccine pasta
  • 4 quarts Water
  • 2 teaspoons Salt for pasta water

Directions

Step 1

Season the chicken breasts with 1 teaspoon of salt and 1/2 teaspoon of black pepper on both sides.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.

Step 3

In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Be careful not to burn it.

Step 4

Deglaze the skillet with the chicken broth, scraping up any browned bits from the bottom of the pan.

Step 5

Stir in the heavy cream, grated Parmesan cheese, and chopped sun-dried tomatoes. Simmer over low heat for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.

While the sauce is simmering, bring 4 quarts of water to a boil in a large pot. Add 2 teaspoons of salt and the fettuccine pasta. Cook according to the package instructions until al dente. Drain and set aside.

Return the cooked chicken breasts to the skillet with the sauce and spoon the sauce over the chicken to coat. Add the chopped fresh basil and simmer for 2 more minutes.

Step 8

To serve, divide the cooked fettuccine pasta among four plates. Top each portion with a chicken breast and spoon the creamy sauce over the top.

Garnish with additional Parmesan cheese and fresh basil if desired. Serve immediately and enjoy!
