Ingredients

  • 2 pieces Chicken breasts
  • 2 tablespoons Soy sauce
  • 3 cloves Garlic cloves
  • 1 tablespoon Ginger
  • 3 tablespoons Vegetable oil
  • 12 ounces Lo mein noodles
  • 1 medium Red bell pepper
  • 1 large Carrot
  • 2 cups Broccoli florets
  • 2 stalks Green onions
  • 2 tablespoons Peanut butter
  • 1.5 tablespoons Chili garlic sauce
  • 2 tablespoons Hoisin sauce
  • 2 teaspoons Rice vinegar
  • 1 teaspoon Sesame oil
  • 3 tablespoons Coconut milk

Directions

Step 1

Slice the chicken breasts into thin strips and marinate them with 1 tablespoon of soy sauce for 10 minutes.

Step 2

Mince the garlic and ginger and set aside.

Step 3

Cook the lo mein noodles according to the package instructions. Drain and set aside.

Step 4

Thinly slice the red bell pepper, shred the carrot, and chop the broccoli into bite-sized pieces.
