Ingredients

  • 1 pound ground chicken
  • 2 tablespoons olive oil
  • 1 medium, finely chopped onion
  • 2 cloves, minced garlic
  • 1 large egg
  • 0.5 cup bread crumbs
  • 0.25 cup milk
  • 1 tablespoon Worcestershire sauce
  • 0.5 cup ketchup
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped parsley

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a small skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, combine the ground chicken, sautéed onion and garlic, beaten egg, bread crumbs, milk, Worcestershire sauce, 0.25 cup of ketchup, dried thyme, salt, and black pepper. Mix until all ingredients are just combined. Avoid overmixing to prevent a tough meatloaf.

Transfer the chicken mixture to a greased loaf pan, pressing it down gently to spread it evenly. Smooth the top with a spatula.

Spread the remaining 0.25 cup of ketchup evenly over the top of the meatloaf.
