  • 2 pieces boneless, skinless chicken breasts
  • 4 large russet potatoes
  • 4 tablespoons unsalted butter
  • 0.5 cup whole milk
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoons dried thyme
  • 0.5 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel the russet potatoes and cut them into evenly sized chunks. Place them in a large pot of salted water and bring to a boil over medium-high heat. Cook for 15-20 minutes, or until fork-tender.

Step 2

While the potatoes cook, pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, paprika, and dried thyme.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes per side, or until golden brown and cooked through. Remove them from the pan and set aside, tenting with foil to keep warm.
