Place the chicken breasts between two sheets of plastic wrap or parchment paper. Pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
Season both sides of the chicken breasts with salt and pepper.
Dredge the chicken in the flour, shaking off any excess. Set aside on a plate.
In a large skillet, heat 1 teaspoon of olive oil and 1/2 tablespoon of butter over medium heat.
Add half of the chicken breasts to the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside on a clean plate.

Stir in the chicken broth and simmer for another 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Return the chicken breasts to the skillet, nestling them into the sauce. Spoon the mushrooms and sauce over the chicken.
Cook for 2-3 minutes to reheat the chicken and allow it to absorb some of the sauce flavors.
Sprinkle with freshly chopped parsley, if desired. Serve warm alongside vegetables, mashed potatoes, or your favorite side dish.
