Ingredients

  • 4 pieces (4 ounces each) Boneless, skinless chicken breasts
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups All-purpose flour
  • 2 teaspoons Olive oil
  • 1 tablespoon Unsalted butter
  • 8 ounces Cremini or white mushrooms, thinly sliced
  • 2 cloves Garlic, minced
  • 0.5 cups Dry Marsala wine
  • 0.5 cups Low-sodium chicken broth
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap or parchment paper. Pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

Step 2

Season both sides of the chicken breasts with salt and pepper.

Step 3

Dredge the chicken in the flour, shaking off any excess. Set aside on a plate.

Step 4

In a large skillet, heat 1 teaspoon of olive oil and 1/2 tablespoon of butter over medium heat.

Step 5

Add half of the chicken breasts to the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside on a clean plate.

Step 6

Repeat with the remaining chicken breasts, using the remaining 1 teaspoon of olive oil and 1/2 tablespoon of butter. Remove the cooked chicken and set aside.

Step 7

In the same skillet, add the sliced mushrooms. Cook over medium heat for 6-8 minutes, stirring occasionally, until they release their juices and turn golden brown.

Step 8

Add the minced garlic to the skillet and sauté for 1 minute until fragrant.

Step 9

Pour the Marsala wine into the skillet and scrape up any browned bits on the bottom of the pan with a wooden spoon. Let the wine simmer for 2-3 minutes to reduce slightly.

Step 10

Stir in the chicken broth and simmer for another 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Step 11

Return the chicken breasts to the skillet, nestling them into the sauce. Spoon the mushrooms and sauce over the chicken.

Step 12

Cook for 2-3 minutes to reheat the chicken and allow it to absorb some of the sauce flavors.

Step 13

Sprinkle with freshly chopped parsley, if desired. Serve warm alongside vegetables, mashed potatoes, or your favorite side dish.
