  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cups All-purpose flour
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 8 ounces Cremini or white mushrooms (sliced)
  • 2 cloves Garlic (minced)
  • 0.75 cups Marsala wine
  • 0.5 cups Chicken broth
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Place the chicken breasts one at a time between two sheets of plastic wrap or parchment paper and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

Step 2

In a shallow dish, combine the flour, salt, and pepper. Dredge each chicken breast in the seasoned flour, shaking off any excess.

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add two chicken breasts to the skillet and cook for 3-4 minutes on each side, or until golden brown and fully cooked through. Transfer the chicken to a plate and tent with foil to keep warm.
