  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cups All-purpose flour

  • 0.5 teaspoons Black pepper

  • 3 tablespoons Unsalted butter
  • 2 cloves Garlic cloves, minced
  • 2 medium Shallots, finely chopped
  • 1 cups Dry Marsala wine
  • 0.75 cups Chicken broth
  • 2 tablespoons Capers, drained and rinsed
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.

Step 2

In a shallow bowl, mix the flour with salt and black pepper.

Step 3

Dredge each chicken breast in the flour mixture, coating both sides, and shake off the excess.

Step 4

Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.

Cook the chicken breasts in the skillet for 3-4 minutes per side, or until golden brown and cooked through. Transfer the chicken to a plate and cover with foil to keep warm.
