Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 3 tablespoons Lime juice, fresh
  • 1 cup Orange juice, fresh
  • 2 tablespoons Tequila (optional)
  • 4 cups Chicken broth
  • 0.25 teaspoons Saffron threads
  • 2 cups Long-grain white rice
  • 1 cup Diced tomatoes, drained
  • 0.5 cups Frozen peas
  • 0.25 cups Cilantro, chopped
  • 4 Lime wedges

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or sauté pan over medium-high heat. Add the chicken breasts and sear for about 3-4 minutes on each side, until golden brown. Remove the chicken and set aside.

Step 3

In the same pan, reduce the heat to medium and add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Deglaze the pan by adding lime juice, orange juice, and tequila (if using). Stir to combine, scraping any browned bits from the bottom of the pan.

Add the chicken broth and saffron threads to the skillet. Stir until the saffron is evenly distributed, and bring the liquid to a gentle simmer.

Cover the pan with a tight-fitting lid and reduce the heat to low. Let the mixture simmer for 20 minutes, or until the rice is cooked and the chicken is tender.

Step 8

Remove the lid and gently stir in the diced tomatoes and peas. Cover again and let cook for an additional 5 minutes until the peas are heated through.

Step 9

Garnish with chopped cilantro and serve with lime wedges on the side for a fresh citrusy finish.
