  • 6 pieces bone-in, skin-on chicken thighs

  • 2 pieces carrots, peeled and sliced
  • 200 grams white mushrooms, sliced
  • 1 cup dry white wine
  • 1 cup chicken stock
  • 400 grams canned crushed tomatoes
  • 2 tablespoons brandy (optional)
  • 3 sprigs fresh thyme sprigs
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the chicken thighs dry with paper towels and season them on both sides with salt and pepper.

Step 2

Dredge each chicken thigh in flour, shaking off any excess.

Heat the olive oil and butter in a large skillet or Dutch oven over medium-high heat. Add the chicken thighs skin-side down and cook until golden-brown, about 4-5 minutes per side. Remove the chicken and set aside.
