Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Dredge the chicken in flour, shaking off any excess.

Step 3

Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 4

Add the chicken breasts to the skillet and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken and set it aside on a plate.

Step 5

In the same skillet, add the remaining 2 tablespoons of butter and reduce the heat to medium.

Step 6

Add the sliced onions to the skillet and cook for 10-12 minutes, stirring often, until they are caramelized and golden brown.

Step 7

Deglaze the skillet by adding the white wine. Scrape the bottom of the pan to loosen any browned bits and let the wine reduce for 2-3 minutes.

Step 8

Pour in the chicken broth and bring the mixture to a simmer. Cook for another 3-4 minutes until the sauce thickens slightly.

Step 9

Return the cooked chicken breasts to the skillet, spooning the onion sauce over the top. Cook for 2-3 minutes to reheat the chicken.

Step 10

Garnish with chopped fresh parsley and serve hot. This dish pairs beautifully with mashed potatoes, rice, or crusty bread.
