Ingredients

  • 450 grams boneless, skinless chicken breast
  • 450 grams lo mein noodles (soft or fresh)
  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons dark soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 medium carrot, julienned
  • 1 medium red bell pepper, thinly sliced
  • 120 grams snap peas
  • 3 stalks green onions, chopped
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Slice the chicken breast into thin strips and place them in a bowl. Add the cornstarch, 1 tablespoon of soy sauce, and 1 tablespoon of water. Mix until the chicken is well-coated, then set aside to marinate for 15 minutes.

Step 2

Meanwhile, cook the lo mein noodles according to the package instructions. Drain, rinse with cold water to stop cooking, and set aside.

Step 3

In a small bowl, mix the remaining soy sauce, dark soy sauce, oyster sauce, sesame oil, and 2 tablespoons of water to create the sauce. Set aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry for 3-4 minutes, or until the chicken is cooked through. Remove the chicken from the wok and set aside.

Step 5

In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for 30 seconds until fragrant.

Step 6

Add the julienned carrot, red bell pepper, and snap peas to the wok. Stir-fry the vegetables for 2-3 minutes until they are just tender but still crisp.

Step 7

Return the cooked chicken to the wok and toss with the vegetables.

Step 8

Lower the heat to medium and add the cooked lo mein noodles and the sauce mixture. Gently toss everything together until the noodles are evenly coated with the sauce and heated through, about 2-3 minutes.

Step 9

Season with salt and black pepper to taste, then garnish with chopped green onions before serving.

Step 10

Serve hot and enjoy your Chicken Lo Mein Soft Noodles!
