Clean the chicken livers by removing any visible fat and connective tissue. Rinse under cold water and pat dry with paper towels.
Peel and finely chop the onion. Mince the garlic cloves.
Heat the olive oil and 50 grams of butter in a large skillet over medium heat.
Add the chopped onion and garlic to the skillet and sauté for 3-4 minutes, or until softened and translucent.
Add the chicken livers to the skillet. Cook for 5-7 minutes, turning occasionally, until they are browned on the outside but still slightly pink in the center.
Stir in the thyme, allspice, salt, and black pepper.
If using, deglaze the pan with brandy by pouring it into the skillet and cooking for another 1-2 minutes, allowing the alcohol to evaporate.
Transfer the contents of the skillet to a food processor or blender. Add the heavy cream and the remaining 100 grams of butter.
Process the mixture until smooth and creamy. Taste and adjust seasoning if needed.
Spoon the pâté into ramekins or a serving dish, smoothing the top with a spatula.
Cover and refrigerate for at least 2 hours, or until firm. Serve chilled with crusty bread, crackers, or fresh vegetable slices.
