Clean the chicken livers by removing any connective tissue or greenish parts. Rinse gently under cold water and pat dry with paper towels.
Finely dice the shallots and mince the garlic cloves.
In a large skillet, heat the olive oil over medium heat. Add the shallots and sauté until soft and translucent, about 3-4 minutes. Add the garlic and cook for another 30 seconds until fragrant.
Add the cleaned chicken livers to the skillet and cook for 2-3 minutes on each side, or until just browned but still pink in the center. Do not overcook, as this will affect the texture of the pâté.
Sprinkle the thyme, salt, pepper, and allspice over the livers, then add the bay leaf. Pour in the brandy and simmer for 1-2 minutes to allow the alcohol to cook off. Remove from heat and discard the bay leaf.
Transfer the mixture to a food processor, along with 100g of the unsalted butter (reserve the rest for later) and the heavy cream. Blend until smooth and creamy.
Taste and adjust seasoning as needed. If you desire a smoother texture, push the mixture through a fine mesh sieve before transferring to serving ramekins or jars.
Melt the remaining 50g of unsalted butter and pour a thin layer over the top of the pâté to seal it. Optionally, garnish with a thyme sprig.
Cover tightly and refrigerate for at least 2 hours, or until chilled and firm. The butter seal helps preserve the pâté for up to 4-5 days.
Serve chilled with crusty bread, crackers, or pickles for a delicious appetizer.
