  • 1 14-ounce can Diced tomatoes (canned)
  • 2 tablespoons Fresh lime juice
  • 1 small Jalapeño (deseeded and finely chopped)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 cups Fresh cilantro (chopped)
  • 1 large Avocado (sliced, for garnish)
  • 1 cup Tortilla chips (crushed, for garnish)
  • 4 pieces Lime wedges (for garnish)

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Step 2

Season the chicken breasts with a pinch of salt and pepper, then sear them in the pot for about 3-4 minutes on each side until lightly browned. Remove the chicken from the pot and set aside.
