Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 pieces garlic cloves, minced
  • 4 cups chicken broth
  • 1.5 cups orzo pasta
  • 1 cup lemon juice
  • 1 tablespoon lemon zest
  • 3 tablespoons fresh dill, chopped
  • 0.5 cup Parmesan cheese, grated (optional)
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Season both sides of the chicken breasts with 1/2 teaspoon of salt and 1/2 teaspoon of pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes per side, until golden brown. Remove chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté for 1 minute until fragrant.

Stir in the orzo pasta and toast it for 2 minutes, stirring frequently.
