Ingredients

  • 200 g Rice noodles
  • 300 g Chicken breast (sliced thinly)
  • 400 ml Coconut milk

  • 4 tbsp Laksa paste

  • 100 g Bean sprouts

  • 2 Spring onion (sliced)
  • 1 Red chili (sliced)
  • 4 Lime wedges
  • 1 tsp Salt
  • 1000 ml Water (for boiling noodles)

Directions

Step 1

In a large pot, bring 1000 ml of water to a boil. Add the rice noodles and cook according to the package instructions until tender. Drain and rinse with cold water. Set aside.

Heat 2 tbsp of vegetable oil in a large saucepan over medium heat. Add the laksa paste and sauté for 2-3 minutes until fragrant.
