  • 4 pieces boneless, skinless chicken thighs
  • 1 cup coconut milk

  • 1 piece red chili, sliced
  • 2 pieces lemongrass stalks, bruised
  • 2 tablespoons vegetable oil
  • 2 tablespoons cilantro leaves, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups jasmine rice (for serving)

Directions

Step 1

Prepare the chicken thighs by patting them dry with paper towels. Season both sides with salt and pepper.

Heat 2 tablespoons of vegetable oil in a large skillet or sauté pan over medium heat.
