Ingredients

  • 500 grams Ground chicken
  • 1 small Onion (grated)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Fresh parsley (finely chopped)
  • 2 tablespoons Fresh cilantro (finely chopped)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.25 teaspoons Ground cinnamon
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 3 tablespoons Breadcrumbs
  • 1 large Egg
  • 2 tablespoons Olive oil (for cooking)

Directions

Step 1

In a large mixing bowl, combine the ground chicken, grated onion, minced garlic, chopped parsley, chopped cilantro, ground cumin, ground coriander, paprika, ground cinnamon, salt, and black pepper.

Step 2

Add the breadcrumbs and the egg to the mixture. Mix well with your hands or a spatula until everything is evenly combined.

Step 3

Cover the bowl with plastic wrap and let the mixture rest in the refrigerator for 15-20 minutes. This helps the flavors meld together and makes the mixture easier to shape.

Step 4

After chilling, take small portions of the mixture (about 2 tablespoons each) and shape them into oval or round koftas. You can also thread them onto skewers for grilling if desired.

Step 5

Heat a large skillet or grill pan over medium heat and add the olive oil. Once hot, cook the koftas in batches for about 4-5 minutes per side, or until they are golden brown and cooked through. The internal temperature should reach 75°C (165°F).

Step 6

Once cooked, transfer the koftas to a paper towel-lined plate to absorb any excess oil.

Step 7

Serve the chicken koftas hot with a side of rice, pita bread, salad, or a yogurt-based sauce such as tzatziki or garlic yogurt.
