Ingredients

  • 1 kg Chicken (bone-in, cut into pieces)
  • 4 large Tomatoes (ripe, finely chopped or blended)
  • 4 whole Green chilies
  • 1 tbsp Ginger paste
  • 1 tbsp Garlic paste
  • 4 tbsp Oil
  • 1 tsp Red chili powder
  • 1.5 tsp Coriander powder
  • 0.5 tsp Turmeric powder
  • 1.5 tsp Salt
  • 0.5 tsp Garam masala powder
  • 1 tsp Cumin seeds
  • 3 tbsp Fresh coriander leaves (chopped)
  • 2 tbsp Fresh ginger (julienned)
  • 0.5 cup Water

Directions

Step 1

Heat oil in a large wok (karahi) over medium-high heat.

Step 2

Add cumin seeds and sauté for 1 minute until aromatic.

Step 3

Add the ginger and garlic paste, and stir-fry for 1-2 minutes until fragrant.

Step 4

Add the chicken pieces to the wok and cook on high heat, stirring occasionally, for 6-8 minutes until the chicken starts to brown slightly.

Step 5

Stir in the chopped or blended tomatoes along with red chili powder, coriander powder, turmeric powder, and salt.

Step 6

Cover the wok, reduce the heat to medium, and let the mixture simmer for 15-20 minutes, stirring occasionally, until the chicken is tender and the tomatoes have broken down into a thick gravy.

Step 7

Remove the lid and cook on high heat for about 5-7 minutes, stirring continuously, to reduce the gravy to your desired consistency.

Step 8

Add garam masala powder and whole green chilies. Stir well and let it cook for another 3 minutes.

Add water (if needed) to adjust consistency, then garnish with julienned ginger and chopped fresh coriander leaves.

Step 10

Serve hot with naan, roti, or steamed rice.
